SCAMORZA & SMOKED SCAMORZA

Scamorza is a typical stretched curd cheese originally from the southern regions of Puglia and Calabria. Relative to the mozzarella, the scamorza is traditionally hung by two thirds of the length in order to let it complete the drying process. Scamorza is especially enjoyable baked or grilled and it’s flavor is often described as a more dominant and intense mozzarella. The smoked scamorza also adds a very enjoyable side note to the after taste.
