Gorgonzola is a veined Italian blue cheese, made from unskimmed pasteurized cow’s milk. The Cheese is mainly produced in the northern Italian regions of Piemonte and Lombardia and it takes three to four months to attain full ripeness. This cheese has a crumbly and soft texture with a nutty aroma. It can have a mild to sharp taste depending on its age. Gorgonzola is very versatile, it is perfect to be eaten on its own, but also to make recipes to cook. A must for a quick dinner is pasta with Gorgonzola sauce; it goes also perfectly with vegetables or salads.
